In a medium bowl add the olive oil, zest from 1/2 a lime and juice from one lime together and stir.
Use a garlic press (or chop the garlic) and add two cloves of garlic to the mixture.
Add the dry spices (cumin, salt and black pepper).
Finally, add 3/4 of the cilantro (save a little for garnishing the chicken later). Mix all of the ingredients together in the bowl.
Add the chicken breast to the bowl. Mix the chicken around until it is covered with the marinade and then let it sit in the refrigerator to marinade for 1-4 hours.
Preheat your grill to 500 degrees and then grill the chicken for about 15 minutes or until the chicken is cooked through. Grill times will vary based on temperature of the grill and size of each chicken breast.
